Bruschetta - The Perfect Antipasto
Bruschetta (broo-sket-tah) is the perfect afternoon snack or appetizer that takes the edge off with panache. Like many Italian recipes, it is best when kept simple. Bruschetta is simply thick slices of toasted bread with garlic and olive oil. Some places brush it with oiled garlic, others just oil, and some with other stuff. That's it for the Italian version.
But as we are American and like things a bit overdone, we are going for gold here: our's has chopped garlic, some chopped onion, diced Italian
tomatoes, olive oil and basil. And, with a glass of red
wine....mama mia!
Toast the bread, don't burn it, chop the garlic and onion, dice up some tomatoes. Sprinkle the garlic and onion on top - to your personal tastes, sprinkle the diced tomatoes and torn leaves of basil on top, and pour on the olive oil - to your personal tastes. That's it!
