What are Italian rentals really about? It's all about cultural immersion. Sure we have a great choice of affordable rentals to choose from, but its about a lifestyle that is shared by a small niche of society. "Slow Travel" and Slow Food" is what we all share that come here to this site and click on the recipe link.

We all share and appreciating the Southern European and that is best represented by good food using fresh ingredients; good wine to accompany the meal; music (which I think is important to accompany both the food and wine, along with stimulating conversation) and of course villa rentals that are largely outside the usual well-grooved tourist path.

And so to this end, we invite you to For the latter decision, we have been collecting some recipes that are particularly well suited for cooking at home - whether that's where you sit right now, or during your stay in Italy. Have a look and as your waitress would say in the local diner, "enjoy!"

Antipasti

  • Bruschetta Great for hungry kids cranky from the road. "All that art mom!" they whine. Feed them this and they'll stop complaining.
  • Palermo's Panelle From the lowly chickpea comes a slice of heaven. It's like polenta but better...it's deep fried.
  • Zuppa di Lucca Aahh..Lucca. They know very well about three things - opera, olive oil and Zuppa di Lucca.
  • Fagiole di Lucca Call us crazy, but we have spent a lot of time in Lucca. Eating beans and sausage.

  • Salad via Pantelleria Easy to do at home if you can get some capers.

Pasta

Sauces

  • Franchi Daigo's One Pot Red Sauce: A "tried and true" villa recipe for your basic red sauce, Italian Style - simple and unadorned. Best yet, all you need is a pot, knife, spoon and can opener.
  • The Umbrian Red Sauce: Life is great when all you do is add bacon and a unique regional sauce is born.
  • Pesto alla Villa: If the kids continue to complain after giving them a bruschetta (see above) have them prepare this one as punishment.
  • Our Own Clam Sauce: Very, very yummy.

Pizza

  • Ricks Stone Pizza: Long go dismayed by the abundance of "pizza product" out there (trot out the usual frozen pizza, Dominoes, Pat's, Little Ceasar's, Marios, Pizza Hut, Peace of Pizza...), I have set out to become an expert in adult pizza.

Sides

Chicken

  • Pizza Chicken Recipe: From the Midwest of the good ol' USA comes a classic recipe that would come from no other kitchen in the world. We dare you to cook this for your Italian hosts!
  • Beer Can Chicken: This is American...there is no way you will find an Italian shoving a beer can inside the cavity of a chicken and grilling...unless that Italian lives in the U.S. Great summer recipe.

Beef

  • Our SI-FI Bisteca: A true road food. Strap that filet to your engine mount, drive from Siena to Florence and its done. Ready to eat. Medium rare.

Fish

  • Yvette's Pesce Autumno: Something for the fall when porcini mushrooms abound, grapes are squeezed and the fish are jumpin'.
  • Pesce Sale: This one is at once a magical, easy and fabulous tasting. There are three requirements - whole fish, coarse salt and an oven.
  • Bacon Wrapped Scallop Kabobs: The title says it all. Little pasta on the side and your summer is complete.

Contorni

  • Pantelleria Patate The wee island of Pantelleria produces loads of capers. What to do with them? Cook them with potatoes.
  • Funghi alla Franchi: Take advantage of that BBQ or wood oven and grill up some of these babies.
  • Zucchini FrustareIf you have a bunch of zucchini in your garden that flower to the nines, but never produce the fruit...you're not alone.

Desert

  • Cantucci Sophistication is defined by pushing back from the table and dipping a cantucci into a glass of Vin Santo. Here's the recipe - try it at home, not on the road.
  • Pere da Lucca: Wine cooked pears. A dish to die for and crazy easy to make. Even the men folk can make this one.
  • Ricotta Cake: Like you've died and gone to heaven.
  • Tiramisu From Alberto: Sure it lots of eggs and coffee...but who would have thought these two things can make heaven.
