Tuscan Fagiole and Olive Oil Recipe
Italians are known for their beans. Fagiole. In Lucca they have their own style of making beans as well. It is easy and always a crowd pleaser. A whole lot of large kidney beans (get the dried type and follow the directions for reconstituting). Soak your garlic in the oil for a considerable amount of time. Take some of the oil and garlic and cook chunks of sausage along with the sage. Remember - it would be considered a small insult if you were to use some typical American "Sweet Italian" sausage. We love that stuff too. But for this get yourself to a real butcher and buy something interesting. A Blood Sausage or something like that. When the meat is about done add in the beans and mix thoroughly getting them warmed. Put in the rest of the garlic/olive oil. Mix and serve. Mama Mia! Thatsa some a buon cookin!
