Tuscan Fagiole and Olive Oil Recipe

Italians are known for their beans. Fagiole. In Lucca they have their own style of making beans as well. It is easy and always a crowd pleaser.

A whole lot of large kidney beans (get the dried type and follow the directions for reconstituting).
Some sausage
Garlic
Sage leaves
Olive oil...lots of this.

Soak your garlic in the oil for a considerable amount of time. Take some of the oil and garlic and cook chunks of sausage along with the sage. Remember - it would be considered a small insult if you were to use some typical American "Sweet Italian" sausage. We love that stuff too. But for this get yourself to a real butcher and buy something interesting. A Blood Sausage or something like that. When the meat is about done add in the beans and mix thoroughly getting them warmed. Put in the rest of the garlic/olive oil. Mix and serve.
